

Mascarpone pouches are delicious desserts made of crepes filled with a mascarpone cream scented with cognac and accompanied by apples in syrup. A delicate and indulgent dessert that wins you over at first bite.
Put the flour in a bowl with a pinch of salt and the egg
Whisk in the ingredients, pouring in the milk in a thin stream
Add 10 g of melted butter to the batter and let it rest for two hours
Prepare the cream
Whisk the egg yolk with the sugar
In a separate bowl work the mascarpone until creamy
Fold in the liqueur and the drained, diced pears
Place in the fridge
Thin the crepe batter with a little water or milk
Grease the pan with a little melted butter, place it over the heat and pour a not too thin layer of batter
Tilt the pan so the batter covers the bottom and cook the crepe 2 minutes per side
Proceed in the same way with the remaining batter
Let the crepes cool then place the cream in the center of each one
Lift the edges to form pouches and secure them with a toothpick
Garnish with some orange zest and serve
