

Stuffed calamari with shrimp is a delicious seafood dish, perfect to serve as a second course. The calamari are filled with a mix of shrimp, chopped parsley, capers, breadcrumbs, and canned anchovy fillets to achieve a rich and flavorful taste. Wash and boil the potato, peel it and mash it with a fork
Clean the calamari, empty them, remove the eyes and beak, peel them and wash them under running water
Dry them and roughly chop all the tentacles
Chop the tentacles together with the peeled shallot, the previously broken anchovy fillets, and the desalted capers using a kitchen knife
Pour the mixture into a bowl with parsley, chopped shrimp, mashed potato, breadcrumbs, salt, and mix
Stuff the calamari with the filling obtained
Sew the openings with kitchen twine and flavor the calamari in oil by placing them in a wide, low-sided pot
Moisten them with white wine, cover, and let cook over very low heat
When ready, after about 30-40 minutes, let them cool, remove the string, and slice them
Serve with the warmed cooking juices
