

Surprise Pouches are tasty and unusual filled slices stuffed with a combination of veal, melting mozzarella and anchovies. Place the veal slices on a cutting board and flatten them slightly with a meat tenderizer
Spread each slice with a thin layer of tomato pulp and sprinkle half a broken anchovy on top
Add a slice of mozzarella and a pinch of oregano
Fold each slice like a wallet, secure the rolls with 2-3 toothpicks and dust them lightly with flour
Trim the bell pepper and cut it into thin strips
In a pan heat 2 tablespoons of oil, add the bell pepper, season with salt and cook over low heat, covered, for 10 minutes
In another pan sauté the rolls with 3 tablespoons of oil and 1 knob of butter
As soon as they are browned, transfer them to a plate
Then deglaze the cooking residue in the pan with the wine
Add the remaining tomato pulp, the rolls and the peppers
Adjust salt and pepper and cook everything together, covered, for half an hour
