Knead the flour with all the indicated ingredients, work it until you obtain a soft dough
Divide it into two balls and let them rise for about 15 minutes
Grease a baking pan
Roll out the dough and cut it into two discs; place the first on the bottom of the pan and pour the vegetable filling over it
Then brush the outer edge of the dough with a brush dipped in beaten egg
Cover everything with the other disc and prick it with a fork
Brush again with the egg-wet brush and bake in a preheated oven for about 10 minutes For the filling: Put the oil and the onion in a saucepan and let cook over low heat for about 20 minutes, taking care to stir often
Remove from the heat and add the previously boiled and chopped chicory, the cheese, the olives and the peeled tomatoes
Stir and return to the heat for 10 minutes
Then the filling will be ready to be used
