The Aged Speck Kreuzspeck from Prosciuttificio Crosare, carefully selected by Salumificio Freoni Danzi, is produced from a selection of fresh boneless pork legs, trimmed in the typical speck shield or baffa cut, with the topside removed and the fat trimmed, a process that gives this cured meat its typical heart-shaped and flat form. Once prepared, the legs are processed with a brine and a seasoning whose recipe is a closely guarded secret of the prosciuttificio; this is followed by a light massage that, in addition to making the meat more tender, flavors it evenly. Finally, the legs are naturally smoked with beech wood. The aging process lasts at least 4 months.
