The almond varieties Valdibella uses for production are Tuono, Genco, Supernova Ferragnes, Romana, Pizzuta, and Fascionello, all typical Sicilian varieties. The almond harvest takes place between August and September. After harvesting and hulling, the almonds are sun-dried for 3-4 days. Once dried, they are stored in sacks and kept in cool, dry warehouses. The shell perfectly protects the almond, allowing it to stay fresh throughout the year and beyond.
