
Mervin Sauvignon Alto Adige DOC riserva of Cantina Merano is a delicious white wine whose origins date back many years. In fact, its origins date back to the times when some wine pioneers had the insight to plant vines of this ancient French variety on the sunny eastern slopes at 500 m above sea level around Castel Lebenberg above the village of Cermes. Since then, the belief has remained the same: only the best clones of Sauvignon Blanc for the most suitable areas, maintaining low yields. The morning sun, the winds descending from the slope, the soil rich in slate and quartz offer the ideal conditions for a mineral, fine, and flavorful white wine, with a pleasant acidity sensation. A delight for the palate with a subtle hint of wood. Grapes: 100% Sauvignon Blanc. Soils: sandy, clayey, enriched with humus, light, permeable, and of moraine origin. Age of the vines: 10-20 years. Winemaking: cold maceration for 12 hours, followed by controlled temperature alcoholic fermentation in small stainless steel and oak wine tanks. The aging of the wine takes place for about 5 months on the yeast.
