
Fried anchovies are a delicious seafood second course, typical of Italian cuisine. Fresh anchovies are soaked in milk, then coated in flour, and finally fried in hot olive oil. Gut the anchovies, wash and dry them, then soak them in milk for half an hour.
Drain them, coat them in flour, and cook them in hot oil.
Drain, salt them, arrange them on a serving plate, and garnish with lemon wedges and parsley sprigs.
They are excellent when paired with a good white wine!
