

Winter vegetable soup is a very tasty and nutritious traditional Italian dish. It is made with savoy cabbage, pancetta, carrot, onion, celery, and seasoned with olive oil, salt, and pepper. It represents a perfect comfort food for cold winter days.
Remove the outer leaves of the savoy cabbage, cut it in half and remove the central core; cut it into strips and wash it thoroughly; peel the carrot, wash it and cut it into slices; clean the celery, wash it and cut it into strips or pieces; peel the onion, wash it and cut it into thin slices
In a saucepan, put a little oil, the sliced onion and diced pancetta, sauté over moderate heat for a few minutes, stirring often with a wooden spoon; add the cabbage, carrot, celery and cover with water (about one and a half liters), add a little salt and cook for about 30 minutes over moderate heat
Serve the soup hot, drizzling it with the remaining oil and sprinkling it with a pinch of freshly ground pepper; accompany it as desired with lightly toasted bread cubes
