A delicious dish of stuffed vegetables with a surprising taste.
First, cut off the tops of the bell peppers and remove the seeds and white parts.
Then cut the zucchinis in half, scoop out the inside with a teaspoon and set it aside.
Place the cut vegetables on a baking sheet, add a drizzle of extra virgin olive oil and a pinch of salt, then bake at 180 degrees for about 20 minutes.
Meanwhile, chop the shallot and put it in a pan with some extra virgin olive oil, add the inside of the zucchinis and tomatoes, and sauté everything for a few minutes.
In a bowl, pour Altro Mince Mix, add water and oil, then mix well. Once the mixture is rehydrated, let it rest in the refrigerator for about 10 minutes.
Put the mixture in the pan with the sauté and cook for 5 minutes.
Add the tomato puree, basil, and cook for another 5 minutes.
Hollow out the tomatoes and add the pulp to the pan with the Mince.
Remove the vegetables from the oven, add the tomatoes, and fill with the mixture.
Bake again for about 15 minutes at 180 degrees.
Serve hot, ideal for a light and nutritious meal.
