
Water-based apple cake: the light dessert that smells like home (without milk, without eggs, and with oat flour). A soft and light water-based apple cake, without milk or eggs, with oat flour and erythritol. Perfect for a healthy and tasty breakfast!
Mix the liquid ingredients: in a large bowl pour the water and extra virgin olive oil and whisk with a whisk or fork until the mixture is slightly emulsified.
Add the dry ingredients: combine the oat flour, baking powder, and erythritol. Mix until you obtain a smooth and homogeneous dough; it should not be too liquid nor too thick. If it is too compact, add a tablespoon of water at a time.
Cut the apple: wash, peel, and slice the apple thinly; gently incorporate the slices into the dough leaving some aside to decorate the surface.
Pour into the pan: line a small baking dish with parchment paper or brush with a drizzle of oil, pour the mixture and level with a spatula. Decorate with the remaining apple slices and a sprinkle of oats.
Bake in air fryer: set the air fryer to 170°C for 20 minutes. After 20 minutes perform the toothpick test; if necessary extend the cooking by 3-4 minutes.
Cool and enjoy: let it cool for about 10 minutes before cutting. Serve as it is or accompanied by Greek yogurt or nut butter.
