Fruit mostarda is a delicious sweet and spicy preserve made with quinces, pears, candied orange and citron peels, white wine, sugar and mustard extract. This specialty has ancient origins and is often served as an accompaniment to aged cheeses. Its preparation takes time, but the result is definitely worth it.
Peel the fruit and cut it into pieces, removing seeds and cores
Cook it in the wine until soft, then press it through a food mill
Weigh it and return it to the pot with an equal weight of sugar
Stir in the candied peels and cook, stirring, until the mixture is dry (about 10 minutes)
Let it cool slightly, then add a few drops of mustard extract
Cool the mostarda obtained; if desired add more mustard and seal in jars
