Fruit mustard is a delicious sweet and spicy preserve made with quince, pears, candied orange and citron peels, white wine, sugar, and mustard extract. This specialty has ancient origins and is often served as an accompaniment to aged cheeses. Its preparation takes time, but the result is definitely worth it.
Peel the fruit and cut it into pieces, removing the seeds and core
Cook it in wine until soft and pass it through a food mill
Weigh it and put it back in the pot with an equivalent amount of sugar
Add the candied peels and stir while cooking until the mixture is dry (about 10 minutes)
Let it cool slightly, then add a few drops of mustard extract
Let the mustard cool; if desired, add more mustard and seal it in jars
