
Fruit Mustard
Fruit mustard is a delicious sweet and spicy preserve, made with quince, pears, candied orange and citron peels, white wine, sugar, and mustard extract. This specialty has ancient origins and is often served as an accompaniment to aged cheeses. Its preparation takes time, but the result is definitely worth it.
Ingredients
- Quince
500G500G - Rather large apple
11 - Rather large pear
11 - Candied orange peels and candied citron peels
50G50G - White wine
75Cl75Cl - Sugarto taste
- Mustard extractto taste
Preparation
- STEP 1 OF 6
Peel the fruit and cut it into pieces, removing the seeds and core
- STEP 2 OF 6
Cook it in wine until soft and pass it through a food mill
- STEP 3 OF 6
Weigh it and put it back in the pot with an equivalent amount of sugar
- STEP 4 OF 6
Add the candied peels and stir while cooking until the mixture is dry (about 10 minutes)

Let it cool slightly, then add a few drops of mustard extract

Let the mustard cool; add more mustard to taste and seal it in jars
