The aged goat capriccio is a cheese made with only goat's milk. It is a tasty cheese with a white moldy rind and a fresh soft paste with the typical smell and taste of goat cheese. The aged goat capriccio is a fatty soft cheese, the wrinkled rind forms about 7 days after production, the paste is white, similar to a mousse. Excellent when paired with persimmon jam and warm bread. Also try it in risottos.
