
Description
Amarone Piovesole is derived from the vinification of dried grapes of the Corvina veronese, Corvinone, Rondinella, Croatina, Teroldego, Merlot, Molinara, Oseleta varieties. These hand-harvested grapes are placed in a drying room for about 100-120 days during which the berries lose water and concentrate in sugars and polyphenols. The slow fermentation lasts about 30-35 days on the skins and subsequently, the wine rests in 25 HL French oak barrels for 48 months, after which it proceeds with blending and bottling. Amarone Piovesole has a very intense red color, almost impenetrable, with clear aromas of small red fruits such as blackberry and currant with hints of coffee and chocolate. On the palate, it is soft and seductive with significant warmth but not intrusive. Pairings: Amarone Piovesole is a powerful and elegant wine, suitable for pairing with red meat and game dishes, even very elaborate and spicy ones. Given the 15% blend of non-native Veronese varieties, it presents very different characteristics from other Amarones, including astringency, elegant and soft yet certainly more significant than other wines of the same vintage, making it excellent paired with fatty dishes and long-aged and blue cheeses.
