Amarone Selezione Antonio Castagnedi from Tenuta Sant'Antonio is a wine dedicated by Antonio Castagnedi, father of the Castagnedi brothers who own the estate. Amarone Selezione Antonio Castagnedi is produced using the appassimento technique with typical Veronese grapes such as Corvina, Rondinella, Croatina, and Oseleta, cultivated in the best vineyards of the estate with an average age of 20-25 years. The grapes are harvested around mid-September and, after a very careful selection, the bunches are placed in well-ventilated rooms for drying. This dehydration process allows the grapes to concentrate their polyphenolic and sugary substances. About three months after the harvest, the bunches are destemmed and fermentation takes place in temperature-controlled steel tanks for about 25 days at a temperature of 28-30°C. Subsequently, the wine is separated from the skins and aged in French oak tonneaux for 24 months before blending and bottling.
