The anchovies are caught in the Gulf of Salerno using the ancient Lampara method known as "cianciolo" and are immediately cleaned and placed under salt in oak containers called terzigni (because they hold a third of a barrel's volume). In the terzigni, the anchovies are arranged in layers interspersed with salt, and a wooden disc is placed on top to exert pressure that facilitates the dripping process, which lasts about 5 months.
