Calvisius Oscietra caviar is one of the most exquisite caviars obtained from the Russian sturgeon native to the Caspian Sea and the Black Sea, a sturgeon that can reach up to 60 kg. Brown in color, Oscietra caviar has an unmistakable taste, fruity with a unique hint of hazelnut, and a soft texture, with egg sizes of about 2.7 to 3.2 mm. Excellent when paired with a Franciacorta Saten. The production of this caviar requires a wait of no less than 11 years. Best consumed pure. Pairings: Oscietra caviar is excellent when paired with a Franciacorta Saten or a blanc des blancs Metodo Classico. Processing: Oscietra caviar is obtained from the ovaries of the Adriatic sturgeon of Italian origin. Once the caviar is obtained, it is salted and immediately packaged.
