The Balsamic Vinegar of Modena PGI Gold Fattoria Estense is a selected product aged in barrels, representing quality aged for at least 3 years in oak barrels. In fact, to boast the aged certification, the minimum aging in wood is 3 years. Produced by the Alico vinegar factory, it boasts the PGI designation. The Gold balsamic vinegar is an excellent product, velvety, with medium-high body, typical color of balsamic vinegar aged in barrels. Pairings: The Gold balsamic vinegar is a fine and elegant product. We recommend pairing it with meat such as grilled fillets, or with aged cheeses like pecorino and Parmigiano Reggiano. Storage: Store away from light and heat sources. Processing: Balsamic Vinegar of Modena PGI can only be produced in the provinces of Modena and Reggio Emilia. The production of balsamic vinegar begins with the pressing of grapes, which, as already mentioned, are native, among which we find Lambrusco and Trebbiano. The PGI designation requires that at least part of the processing takes place in the area established by the regulation. For the gold quality, the aging is at least 3 years in fine wood.
