
Description
It is a semi-fat cheese originating from Monte Grappa. Consumable at a short aging, the cheese has a smooth soft rind with a straw-yellow color. The cheese aged for a long time varies with a harder rind and a darker color. The paste is semi-hard, grainy, and white in color, tending to dark with prolonged aging. The weight of the wheel varies from 2.5kg to 5kg. Pairings: Typically consumed with polenta. Excellent as an appetizer, sometimes even fried. Recommended pairing with medium-bodied red wines. Storage: In the refrigerator or in a cellar at controlled temperature. Processing: The milk obtained from the evening milking of cows is skimmed and added to the milk of the following morning with calf rennet. The curd is broken at a temperature of about 45 °C. The paste is then placed in molds; followed by a soft pressing. The shape weight can be between 2.5 and 5 kg.
