The weight of the wheel varies from 2.5kg to 5kg. Pairings: Typically consumed with polenta. Excellent as an appetizer, sometimes even fried. Recommended pairing with medium-bodied red wines. Storage: In the refrigerator or in a cellar at controlled temperature. Processing: The milk obtained from the evening milking of cows is skimmed and added to the milk of the following morning with calf rennet. The curd is broken at a temperature of about 45 °C.
