Bella Lodi is the cheese with the characteristic black rind typical of the Lodi area. White in color, with an intense and fragrant aroma. It is a cheese recognized for its great digestibility, suitable for everyone: children and the elderly. Bella Lodi has a non-edible black rind, with a grainy texture typical of hard cheeses. Bella Lodi is excellent when paired with a good glass of medium-bodied red wine. Pairings: Bella Lodi is excellent as an appetizer, great with cured meats and walnuts. Pairs well with medium-bodied wines like a Nebbiolo or a Barbera d'Alba. Storage: In the refrigerator or in a cellar at controlled temperature. Processing: Freshly milked milk is placed in basins and added with starter whey. Subsequently, the milk is placed in copper boilers, heated, and natural rennet is added. Once the curd is obtained, it is manually cut, followed by a temperature increase for cooking. The cheese is then placed in molds.
