
Description
Bellavista Saten is a blanc de blanc, produced exclusively with white grape varieties of Chardonnay. Saten is a term that indicates the "silkiness" of the product, and only a Franciacorta wine can produce this type of wine, which is essentially a Franciacorta method wine with slightly lower bottle pressure, around 5 atmospheres, compared to the 6 atmospheres of Brut, Extra Brut, and Pas Dosé. Bellavista was the first to produce and believe in this product in 1984, and since then, it has been produced only in the best vintages, making it a Millesimato product, meaning it is made only with wine from that specific year. The Chardonnay selected for the production of the Millesimato Saten comes only from high hillside vineyards with morning exposure and from vines at least 25 years old, thus in full productive maturity. The Chardonnay is hand-harvested and brought to the winery for pressing, which generates musts selected in the first and second pressing based on the pressure from which they are derived, and ferments 30% in white oak barrels and the rest in steel. In the spring following the harvest, the wine is blended and bottled with the addition of yeasts and sugars to allow for bottle fermentation and the appearance of bubbles (the amount of sugar added will determine the bottle pressure at the end of the process; in this case, for the Saten, the sugar added will be less than other types of Franciacorta). The aging period that Bellavista Saten undergoes is 5 years, after which it is disgorged, corked, and labeled. Pairings: Bellavista Saten is a wine that makes elegance and grace its strong points, making it excellent paired with fish appetizers, even raw, and first courses based on lake or sea fish that are not particularly spicy. Saten Bellavista pairs perfectly with hard cheeses, aged with a strong flavor like Castelmagno or 30-month Parmigiano Reggiano.
