
Description
Ben Rye Donnafugata is the famous Passito di Pantelleria from the Sicilian winery Donnafugata. The Zibibbo (Muscat) is cultivated on beautiful terraces, and the vines are trained in a bush form and placed within a hollow to protect them from the sea salt. The harvest begins after August 15th with the grapes intended for drying, which dehydrate in the sun and wind of Pantelleria for about 20-30 days. During September, the grapes intended to be processed fresh are harvested, then pressed, and the must is fermented in steel. During fermentation, the dehydrated grapes are added, imparting an extraordinary wealth of sweetness and aroma to the fermenting must. The wine, at the end of fermentation, ages for 7 months in steel and 12 months in the bottle before being marketed. Pairings: Ben Rye is defined as a meditation wine that accompanies reading a book or the end of dinner with friends. Excellent with blue cheeses or extremely aged cheeses, desserts based on ricotta, dried fruits, or almond paste. Fantastic pairing with Modica chocolates from Cosaruci.
