Bortolomiol Prior Prosecco di Valdobbiadene DOCG Brut, its name signifies that this Bortolomiol Prosecco is the driest among the wines produced in this Bortolomiol line and was also one of the favorites of the founder Giuliano Bortolomiol. The Glera grapes are harvested in the second half of September and brought to the winery for fermentation, which takes place in steel tanks. After this phase, the Prosecco wine is aged for a few months on the lees before the addition of sugars and selected yeasts for the second fermentation in an autoclave. This final processing phase allows the development of bubbles in the Bortolomiol Prior Prosecco Brut, which are preserved during bottling thanks to isobaric bottling.
