The Glera grapes are harvested in the second half of September and brought to the winery for fermentation, which takes place in steel. After this phase, the Prosecco wine remains on the lees for a few months before the addition of sugars and selected yeasts for the second fermentation in an autoclave. This final processing phase will allow the development of bubbles in the Bortolomiol Senior Prosecco, which are preserved during bottling thanks to isobaric bottling.
