Brunello di Montalcino Pieve San Restituta is the result of a blend of Sangiovese grapes cultivated in the highest areas of the Sugarille and Rennina crus and from the 10 hectares of Sangiovese in Torrenieri. These Sangiovese grapes are harvested at different times according to the varying degrees of grape ripeness. The company policy is not to bottle if the vintage does not meet the standards (in fact, there are no Pieve San Restituta wines in 2002 due to excessive rainfall and also in 2003 due to excessive heat). The grapes brought to the winery are destemmed and placed in steel containers for alcoholic fermentation with maceration lasting about 15 days at temperatures of 25-28°C. Subsequently, the wines are separated from the skins and aged in wood for 24 months, 12 of which in barriques and the remaining in larger barrels before blending and bottling. Pairings: Brunello di Montalcino Pieve di Santa Restituta 2010 is a wine with a strong personality, excellent when paired with dishes based on red meats and game. This Brunello di Montalcino is excellent paired with very aged and blue cheeses.
