Ca del Bosco Cuvée Prestige is the wine that represents Ca del Bosco worldwide. Born in 2007, it reflects the "Ca del Bosco method" in its entirety, from the reception of the grapes to bottling. The grapes, harvested manually between the first and second decade of August, are immediately placed in a cold room to be processed cold, ensuring that the aromatic heritage contained within is not ruined by high temperatures. The next step is washing the grapes, which are directed into soaking tanks and then into drying tunnels before being pressed in the absence of oxygen. The musts are fractioned into first and second selections based on the pressure from which they were generated, and alcoholic fermentation takes place in steel containers at controlled temperatures, remaining in contact with the fine lees until March following the harvest. In April, when the wines are stable and clear, the base wines from 134 vineyards are blended with 20% of reserve wines from previous vintages, which are kept in the cellar to characterize and personalize all vintages, giving a Ca del Bosco stamp to all wines. Bottling is done using machinery patented by Ca del Bosco, which prevents the contact of air oxygen with the wine, avoiding oxidative shocks, and involves adding yeast and sugar to the wine to allow refermentation in the bottle. After this phase, the wine remains in the cellar for at least 25 months before disgorging, dressing, and marketing.
