Description
Cabernet Sauvignon San Michele Appiano comes from vineyards located in Alto Adige, specifically in the areas of Santa Maddalena, Caldaro, and Cortaccia, at an altitude between 250 and 350 meters. The vineyards benefit from a south-southeast exposure, ideal for grape growth. The soils are characterized by moraine deposits and gravelly soils, rich in limestone, which give the wine its unique organoleptic properties. Vinification takes place in stainless steel, followed by malolactic fermentation and aging in large barrels, allowing the wine to develop all its aromatic nuances. Pairings: Cabernet Sauvignon San Michele Appiano is a red wine of great structure and intensity, with a full and round taste. These characteristics make it perfect for pairing with red meat dishes, such as a nice grilled beef fillet or a braised beef in red wine. Its robustness also makes it suitable for game dishes, such as wild boar ragout or roasted venison. As for cheeses, Cabernet Sauvignon San Michele Appiano pairs well with aged and intensely flavored cheeses, such as Parmigiano Reggiano or Pecorino Romano. If you prefer a pairing with fish, you can opt for dishes based on oily fish, such as grilled sardines or bluefin tuna, which with their savoriness and texture manage to balance the power of this wine. Finally, for a pasta pairing, you can choose a dish of pasta with meat ragout or with eggplant, which with their rich and flavorful taste go well with the complexity of Cabernet Sauvignon San Michele Appiano.
