
Description
Carmenere is the result of a meticulous selection of grapes and a skillful winemaking process conducted in full compliance with the Ca' del Bosco Method. The grapes, sourced from 2 historic vineyards, are handpicked in small crates, classified, and cooled. Each bunch is selected by expert eyes and hands, then benefits from exclusive "berry spas," a special system of washing and hydromassage of the bunches, through three soaking tanks and a drying system. Subsequently, each bunch is transported above the maceration vat. With destemming, the berries fall into the vat from above, by gravity. This eliminates traditional pumping systems, which cause the breaking of the skins and unwanted herbaceous notes. Alcoholic fermentation and maceration were conducted for 18 days, carefully managing the temperature and punch-downs. Pump-overs were performed daily, using a pair of lifting tanks in which the wine, drawn from the bottom of the vat, is transferred by gravity. The wine, elevated by the flying tanks, is poured into the vat at high flow to submerge the "cap." Nothing more natural and effective for gently extracting color and tannins. After racking, the wine, still warm, is transferred into small oak barrels, 65% new, made from selected woods, aged for at least 3 years. The aging lasted a total of 12 months, and after a few months, the wine was bottled by gravity, naturally. Thanks to innovative filling systems, the wine does not undergo oxidative shock, agitation, or further additions of sulfites. Its integrity and healthiness are guaranteed. Finally, each packaged bottle is uniquely marked to ensure traceability.
