
Description
Chianti Classico Querciabella is a biodynamic wine, a blend of Sangiovese and Cabernet Sauvignon that undergo different aging processes before blending. The grapes are hand-harvested, placed in steel vats for fermentation at controlled temperatures before being destemmed. Querciabella chooses to destem the bunches and not crush the berries to maintain the integrity of the raw material as much as possible to avoid the extraction of unwanted compounds during maceration. The fermentation with maceration of the Sangiovese lasts about 12 days while for the Cabernet Sauvignon about 20 days. After the separation between the solid and liquid phases, the Sangiovese wine and the Cabernet Sauvignon wine remain aging in French oak barriques of first and second passage for 14 months before blending and bottling. Pairings: Chianti Classico Querciabella is a very balanced and pleasant wine, excellent for accompanying first and second courses based on red meat but also excellent as a pairing for aged cheeses.
