
Description
Chianti Classico Riserva Rocca delle Macie is a selection of the best vineyards and the finest grapes from the Le Macìe Estate in Castellina in Chianti. After careful selection in the vineyard, the grapes are harvested and brought to the winery for vinification. After destemming, the crushed grapes are transferred to steel vats for alcoholic fermentation at a controlled temperature. This process lasts about 15 days at a temperature of 28°C, after which it is separated from the skins and placed in 35 Hl French oak barrels for two years. After blending and bottling, the wine remains in the bottle for at least three months before being marketed. Pairings: Chianti Classico Riserva Rocca delle Macie is a wine suitable for elaborate meat and game-based sauces, roasts, and aged cheeses from the Tuscan tradition and beyond. The pairing with the Bistecca alla Fiorentina from Macelleria Mazza is wonderful.
