Chianti Classico Rocca delle Macie is made from 95% Sangiovese and 5% Merlot grapes. After a careful selection in the vineyard, only the best bunches are picked and brought to the winery for vinification. The grapes are destemmed and placed in temperature-controlled stainless steel containers for alcoholic fermentation with maceration on the skins, which takes place over 12 days at a temperature of about 28°C. Subsequently, the wine is separated from the skins and after malolactic fermentation, it is placed in Slavonian oak barrels for 10 months before blending and bottling. Chianti Classico Rocca delle Macie rests in the bottle for at least 30 days before being released to the market. Pairings: Chianti Classico Rocca delle Macie is a straightforward and elegant Chianti Classico, accompanying first courses and dishes based on white and red meats. It pairs excellently with spicy and flavorful Tuscan cured meats and medium-aged pecorino cheeses, as well as with the Fiorentina steak from Macelleria Mazza.
