Chianti Rufina DOCG Riserva Nipozzano is a symbol of wine in Tuscany, produced with Sangiovese grapes and complementary varieties (depending on the vintage, but including Merlot, Cabernet Sauvignon, Colorino, and Canaiolo). The Nipozzano Castle estate is located about thirty kilometers east of the city of Florence, and the vineyard from which this wine is derived is very old, with root systems well anchored to the soil, capable of absorbing many mineral salts, providing a well-rounded and mature fruit even from a polyphenolic perspective. The grapes ferment in steel vats, and maceration lasts for about 25 days, during which numerous pump-overs and delestage are repeated to promote the extraction of quality compounds from the skins. Subsequently, the Chianti Rufina DOCG Riserva Nipozzano wine undergoes malolactic fermentation and begins the aging process in wood, which lasts for 24 months and involves only a part of the wine. After blending, the Chianti Rufina DOCG Riserva Nipozzano wine is bottled and rests for 3 months before being marketed.
