A better dialect expression that defines the appreciation of a good glass of local red wine. Old and new roots continue to dig today, perhaps they will meet, perhaps they will choose new destinations. The journey is about to begin again. Production area: The grapes come from the company's vineyards located between 250 and 400 meters above sea level in the municipalities of Cividate Camuno, the "Colture" plain, and Berzo Inferiore, the "Vigne Nuove" area. Formerly Civitas Camunnorum, founded by the Romans in 16 A.D., the first cradle of viticulture in the Camuna land. Vinification: The grapes are harvested manually respecting the different polyphenolic ripenings, part of the marzemino is dried in a fruit room for about 60 days. This is followed by cold maceration with subsequent alcoholic fermentation in steel tanks by indigenous yeasts with manual punch-downs, to ensure a delicate extraction of fruit and tannin. After a short post-fermentative maceration, the different types of wine undergo malolactic fermentation, partly in steel, partly in oak barriques and tonneaux, remaining in aging for about 20 months. Finally, the blending with "cold cut" and Ciass Negher is ready for the bottle where it rests for at least 3 months before being released for sale. Pairings: Accompanies aged cheeses from the area, preferably from mountain pastures, traditional main courses, red meats, and game. Alcohol content: 14.5% Vintage: 2019 Designation: Valcamonica IGT
