In Molise, one of the most well-known and cultivated varieties is the international variety Cabernet Sauvignon, which is designated as Molise Rosso Cabernet Sauvignon Colle dei Pastini DOC. The San Zenone winery chooses to produce all wines in purity, and here too is an excellent wine aged only in steel for 2 years, characteristic and typical. The cabernet is trained in guyot, a planting system that favors this variety in this land. The cabernet is harvested at full maturity to avoid the pyrazines (typical pepper aromas of Cabernet) from prevailing excessively in the wine, instead achieving a balanced character. Maceration lasts about 18 days, and fermentation is at a controlled temperature, around 24°C, useful for limiting the extraction of bitter tannins and improving the wine's aromatic aspect. This is followed by aging for 2 years in steel, with complete malolactic fermentation. During aging, the wine softens and becomes ready for drinking. After about two years, it is bottled, resulting in a typical soft and not edgy Cabernet Sauvignon.
