Ca' del Bosco has decided to rediscover and re-evaluate the traditional red blend of the region, once again favoring the Merlot, Cabernet Franc, and Carménère varieties over Cabernet Sauvignon. A return to the past to enhance the character of the Merlot fruit, the elegance of Cabernet Franc, and the roundness of Carménère. The presence of Cabernet Sauvignon ensures the essential structure to provide balance and longevity. This wine is the result of a careful selection of grapes and a skillful vinification conducted in full respect of the Ca' del Bosco Method. The grapes from 8 different vineyards, hand-picked in small crates, are promptly coded and cooled in refrigeration cells. Each bunch is selected by expert eyes and hands, then benefits from our exclusive "grape spa." A special washing and hydromassage system for the bunches, through three soaking tanks and a system for complete drying. Following this, each bunch is transported above the maceration vat. With destemming, the berries fall into the vat from above, by gravity. This eliminates the traditional pumping systems, which cause the breaking of the skins and unwanted herbaceous notes. In the 2018 Harvest, maceration in contact with the skins lasted 18 days for Merlot and Carménère, 19 days for Cabernet Franc and Cabernet Sauvignon. Alcoholic fermentation and maceration were conducted with careful temperature management and punch-downs. Pump-overs were performed daily, using a pair of lifting tanks in which the wine, drawn from the bottom of the vat, is transferred by gravity. The wine, raised by the flying tanks, is poured into the vat, at high flow, to submerge the "cap." Nothing more natural and effective to gently extract color and tannins. At racking, the wines, still warm, are transferred into small oak barrels. Only after malolactic fermentation, in the heart of winter, is the racking and blending of the different lots carried out. Thus is born the "Corte del Lupo Rosso," which continues its aging in wood and steel for about 22 months. Subsequently, the wine is bottled by gravity, naturally. Thanks to innovative "long spout" taps, the wine rises from the bottom of the bottle without laminating, without shaking, and does not undergo any oxidative shock.
