The whole grape bunch is pressed with a pneumatic press at very gentle pressures. During vinification, the musts are separated into two fractions: free-run must, which has the best qualitative characteristics and is used for the production of Franciacorta, and second pressing must, which is not intended for bottling. Alcoholic fermentation takes place in steel tanks at a controlled temperature between 16 and 18 °C. The base wine rests in the tank until the spring following the harvest.
