
Description
Ferrari Maximum Brut is a Trento DOC produced exclusively with Chardonnay grapes selected from the municipalities of Val d'Adige, Val di Cembra, and Valle dei Laghi, sourced from vineyards located at altitudes ranging from 300 to 700m above sea level. The grapes, hand-harvested in the first half of September, are brought to the winery for pressing, and the resulting musts are fractionated, clarified through static cold decantation, and added with selected yeasts for alcoholic fermentation. This fermentation takes place in steel at controlled temperatures around 17°C to allow the yeast to express the aromatic potential present in the Trentino Chardonnay grapes. After this phase, the base wines are blended, and the famous cuvées are decided before the bottling process known as tirage. The refermentation of the base wine will occur directly in the bottles according to the classic method. After refermentation, the wine remains in the bottle on the lees for 36 months after bottling before being disgorged, corked with a mushroom cork, labeled, and packaged. Pairings: Ferrari Maximum Brut is a Trento DOC very suitable to be consumed on its own as an aperitif or paired with cured meats and hard cheeses, even aged ones. However, it is a wine perfectly suited to be consumed throughout the meal, paired with fish-based first courses, risottos, and grilled fish as a second course.
