Franciacorta Brut Vigna Dorata

Franciacorta Brut Vigna Dorata

Franciacorta Brut Vigna Dorata is a Franciacorta made using the Franciacorta method from Chardonnay and Pinot Noir grapes, which are strictly hand-picked in the last week of August during the coolest hours of the day. The Chardonnay is brought to the winery for pressing as quickly as possible, and the whole grapes are crushed. The musts are fractioned into first and second selections based on the pressure from which they were generated. Alcoholic fermentation takes place in temperature-controlled steel containers where numerous batonnages are performed to give the wines structure and aromas. Around March, the wines are blended and bottled with the addition of sugar and yeast, and the second fermentation occurs in the bottle, turning the Chardonnay wine into a Franciacorta only after at least 24 months of aging in the bottle. After disgorgement, the Franciacorta Brut remains in the cellar for an additional 4 months of aging before being labeled, packaged, and marketed. Pairings: Franciacorta Brut Vigna Dorata is a sparkling wine very suitable for pairing with fish appetizers, even raw, and perfect with cured meats and cheeses, even aged ones, excellent with 30-month Parmigiano Reggiano. The versatility of Franciacorta allows it to be paired throughout the meal with a wide variety of dishes, from fish dishes to soups to dishes based on white meat that are not too flavorful and elaborate. Storage: Store at 16-18°C Alcohol content: 13.0% Vintage: 2019 Designation: Franciacorta DOCG Aging: In bottle for 24 months before disgorgement.
