The process continues in the cellar, where the Chardonnay is quickly taken for pressing: the whole grapes are crushed and the musts obtained are then divided based on the pressure applied. The Pinot Noir grapes, on the other hand, undergo maceration in steel with a covered cap for a period of 5-8 hours at 4°C, a method that allows the skins to release aromas and pigments. Alcoholic fermentation takes place in temperature-controlled steel containers, where numerous batonages are carried out to give the wine a distinctive structure and aromas. By March, the wines are blended and bottled with the addition of sugar and yeast, initiating the second fermentation which, after at least 24 months of aging, transforms our Chardonnay into a true Franciacorta. But the journey of our Franciacorta Rosè Vigna Dorata does not end here: after disgorgement, the wine remains in the cellar for a further 4 months of aging before being labeled, packaged, and marketed. A wine of character, for lovers of the genre, which encapsulates in every sip the passion and experience of its producers.
