Franciacorta Saten Brut Vigna Dorata

Franciacorta Satèn Vigna Dorata is a Franciacorta method wine produced from Chardonnay grapes that are strictly hand-picked in the last week of August during the coolest hours of the day. The Chardonnay is brought to the winery for pressing as quickly as possible, and the whole grapes are crushed. The musts are fractioned into first and second selections based on the pressure from which they were generated. Alcoholic fermentation takes place in temperature-controlled steel containers where numerous batonnages are carried out to give the wines structure and aromas. Around March, the wines are blended and bottled with the addition of sugar and yeast, and the second fermentation will occur in the bottle, turning the Chardonnay wine into Franciacorta only after at least 24 months of aging in the bottle. After disgorgement, Franciacorta Satèn remains in the cellar for further aging for another 4 months before being labeled, packaged, and marketed. Pairings: Franciacorta Satèn Vigna Dorata is a sparkling wine very suitable for pairing with fish appetizers, even raw, and perfect with cured meats and cheeses, even aged ones, excellent with 30-month Parmigiano Reggiano. The versatility of Franciacorta allows pairing throughout the meal with a wide variety of dishes, from fish dishes to soups to dishes based on not too flavorful and elaborate white meats.
