
Description
Franciacorta Vigna Dorata Nature is a Franciacorta wine made using the Franciacorta method from Chardonnay and Pinot Noir grapes sourced from the Sala-Colle vineyard, which are meticulously handpicked during the coolest hours of the day in the last week of August. The Chardonnay and Pinot Noir are swiftly brought to the winery for pressing, and the whole grapes are crushed. The musts are fractioned into first and second selections based on the pressure from which they were generated. Alcoholic fermentation occurs in temperature-controlled steel containers where numerous batonnages are performed to give the wines a broader and more complete structure and aroma. Around March, the wines are blended and bottled with the addition of sugar and yeast, and the second fermentation occurs in the bottle, transforming the wine into a Franciacorta only after at least 24 months of bottle aging. After disgorgement, Franciacorta Vigna Dorata Nature remains in the cellar for an additional 4 months of aging before being labeled, packaged, and marketed. Pairings: Franciacorta Vigna Dorata Nature is a sparkling wine well-suited for pairing with fish appetizers, even raw, and perfect with cured meats and cheeses, including aged ones, excellent with 30-month Parmigiano Reggiano. The versatility of Franciacorta allows it to be paired throughout the meal with a wide variety of dishes, from fish dishes to soups to not overly flavorful and elaborate white meat dishes.
