Franciacorta Vintage Collection Saten Ca del Bosco is a "Saten" wine, which means silky. This is precisely the meaning of this type of Franciacorta wine, characterized by lower pressure developed in the bottle after the second fermentation, making it softer and silkier. The Chardonnay and Pinot Bianco used to produce Franciacorta Vintage Collection Saten Ca del Bosco come from vineyards located in the most suitable areas of Franciacorta. The grapes reach maturity around the second decade of August, are hand-harvested, and brought to the winery for storage. According to the "Ca del Bosco method," the grapes must be cooled to 7°C before processing to prevent the loss of aromatic compounds that can be damaged by heat. Once cooled, the grapes are washed and dried before being gently pressed. The musts are clarified and inoculated with selected yeasts and ferment in small French oak barrels, where they remain for 8 months from the harvest before proceeding with the blending. During bottling, sugar and yeasts are added to allow the second fermentation and the development of bubbles inside the bottle. Only after 48 months from bottling is the Franciacorta Vintage Collection Saten Ca del Bosco disgorged and released to the market after 6 months.
