Description
The Greco di Tufo DOCG Novaserra Mastroberardino is one of the most representative white wines of Campania and all of Italy. Produced by the historic Mastroberardino winery, it is a wine that best expresses the territory from which it originates. The reference territory is that of Tufo, a small town in the province of Avellino, known for its sulfur-rich and tuff soils, from which it takes its name. This area, located between 350 and 500 meters above sea level, is characterized by a temperate climate with cold winters and hot, dry summers, ideal conditions for vine cultivation. The Novaserra vineyard extends over about 30 hectares, on predominantly clayey and calcareous soils, with southeast exposure. The Greco vines, from which the wine is obtained, are trained in espalier and pruned in guyot, with a planting density of about 4000 plants per hectare. The production process of Greco di Tufo DOCG Novaserra Mastroberardino begins with the harvest, which usually takes place in the first decade of October. The grapes are hand-picked and carefully selected. This is followed by soft pressing and fermentation in steel at a controlled temperature. The wine is then aged in steel for several months and subsequently in the bottle for at least 3 months before being marketed. The Greco di Tufo DOCG Novaserra Mastroberardino presents itself with an intense straw yellow color, with golden reflections. On the nose, it offers a complex and intense bouquet, with notes of ripe white fruit, white flowers, almond, honey, and minerals. On the palate, it is full, fresh, and savory, with a long and persistent finish. This wine pairs perfectly with fish dishes, shellfish, and mollusks, but also with fresh cheeses and white meats. It is also an excellent aperitif wine. Pairings: The Greco di Tufo DOCG Novaserra Mastroberardino is a white wine of great structure and complexity, with good acidity and minerality. These characteristics make it very versatile in terms of gastronomic pairings. An ideal first pairing could be with fish dishes, particularly with shellfish and mollusks. A seafood risotto or pasta with clams and bottarga could enhance the minerality and acidity of this wine. Another interesting pairing could be with medium-aged cheeses, such as a Tuscan pecorino or a provolone del Monaco. The intense flavor of these cheeses can balance the complexity of the Greco di Tufo. Finally, this wine can also be paired with white meat dishes, such as roast chicken or Ligurian-style rabbit. The structure of the wine can support the richness of these dishes, while the acidity can balance their sweetness. Always remember that food-wine pairings are very subjective and depend greatly on personal tastes. So, experiment and find the pairing you like best!
