Processing: Truffle is a mushroom that is underground and lives in symbiosis with different plant species such as lime trees, hazel, hornbeam, and poplar. The region of Molise, despite what is believed today, was the first truffle producer in Italy. In the summer, truffles are 'hunted' by the searchers at dawn because at that time of the day temperatures are not too high and the dogs can work better. During the winter, the best time of the day is the warmest hours because the soil is warm and the smell of the truffles is more intense and easier for the dogs to locate them.
