Kaprone is a cheese produced by the Botalla dairy in Piedmont. Kaprone is made with goat's milk, which is used raw for the preparation of Kaprone. This aromatic cheese with strong notes is pleasantly paired with a red wine such as Dolcetto or Barbera. Kaprone undergoes medium aging before being marketed, each piece is checked and only those selected by the master cheesemakers will be marketed. Pairings: Kaprone Botalla is excellent consumed on its own or paired with medium-bodied red wines such as Dolcetto or Barbera. Storage: Store in the refrigerator, cover the cut part with a cloth. Processing: The selected goat's milk is brought to the dairy where it is not pasteurized but processed raw. Rennet is added and once the curd is formed, it is broken and then the paste is formed and placed in typical molds. The cheese ages in rooms with controlled temperature and humidity.
