Lagrein Peter Zemmer "Raut" is a wine produced with Lagrein grapes typical of the Trentino Alto Adige wine region. Lagrein Peter Zemmer "Raut" is obtained from Lagrein grapes grown in the clay soils located near the winery. The Lagrein grapes are harvested around the beginning of September and brought to the cellar for vinification. After destemming, fermentation is carried out in stainless steel tanks at a temperature of 28°C for about 10 days, during which numerous pump-overs and rackings allow optimal contact between the skins and the must-wine. Subsequently, the Lagrein Peter Zemmer "Raut" is separated from the skins, with 70% of the wine aged in large oak barrels while the remaining 30% is aged in second or third passage barriques until blending and bottling. The Lagrein Peter Zemmer "Raut" aims to be a wine with a moderate structure while maintaining the strong fruity character of the Lagrein grapes.
