Laimburg Sauvignon Blanc is a wine made with 100% Sauvignon Blanc grapes from the Laimburg winery in Alto Adige. Sauvignon Blanc is a variety that thrives in these territories with a cool climate, avoiding excessive heat that would lead to a loss of the freshness that characterizes these wines. The Sauvignon grapes are harvested around the beginning of September and brought to the winery for destemming, followed by a short period of cold maceration that allows the musts to enrich with aromatic substances present in the skin. After gentle pressing, the musts are inoculated with selected yeasts, and the alcoholic fermentation lasts about 15 days at a temperature of 13-15°C, allowing the yeast to express the aromatic potential of the Sauvignon Blanc variety. After fermentation, the Laimburg Sauvignon Blanc wine remains on its fine lees for several months before blending and bottling. Pairings: Laimburg Sauvignon Blanc is suitable as an aperitif or paired with seafood appetizers (even raw). Excellent with Japanese food and delicate vegetable soups.
