
Description
Lambrusco Vecchio Moro Rinaldini is a typical wine of the region, made with 85% Lambrusco Grasparossa. The grapes are hand-harvested at full ripeness, brought to the winery, destemmed, and placed in temperature-controlled stainless steel vats for alcoholic fermentation with maceration. Selected yeasts are added, and for 12 days the skins remain in contact with the fermenting must, imparting color and aromas. Subsequently, the wine is racked and transferred to an autoclave for refermentation and the appearance of bubbles. Once this process is completed, the wine is bottled under isobaric conditions and will rest in the bottle for a few months before being marketed. Pairings: Lambrusco Vecchio Moro Rinaldini is a wine suitable for pairing with typical dishes of Emilian cuisine and excellent with traditional cured meats such as Prosciutto di Parma, Coppa di Parma, and Culatello di Zibello. It is also excellent with cheeses, even aged ones like Parmigiano Reggiano, and with first and second courses based on red meat.
