Description
VINIFICATION: From the vineyard, the Chardonnay crates are placed in a refrigeration cell at a temperature of 4°C for 24 - 36 hours. The grapes are thus cooled and reach a temperature of 10°C. This process favors a better extraction of varietal aromas. The cooled grapes are taken to the press for gentle pressing of the whole clusters, from which no more than 60% of the free-run juice is extracted. Subsequently, fermentation occurs at a temperature fluctuating around 16°C. Maturation on the lees lasts about 6 months and is carried out in stainless steel tanks. A portion of the base wines that will form the tirage cuvée undergoes malolactic fermentation. AGING IN BOTTLE ON THE LEES: 48 months Pairings: Ideal as an accompaniment for an aperitif or the entire meal. Try it with structured first courses such as baked pasta and richly creamy risottos.
