Molino a Vento Nerello Mascalese Orestiadi is a wine produced with 100% Nerello Mascalese grapes from the Tenute Orestiadi winery in the Gibellina area of Sicily. The hills of Gibellina, where the vineyards are located, are at an altitude between 100 and 300 meters above sea level. The soils of these hills are predominantly sandy, allowing the roots to penetrate deeply to absorb nutrients and bring the Nerello Mascalese to maturity. The grapes are harvested at perfect phenolic ripeness and brought to the winery for crushing. Fermentation takes place in temperature-controlled stainless steel containers for about 12-15 days at a temperature around 26°C. During maceration, pump-overs and delestage are repeated to extract coloring compounds and aromas from the Nerello Mascalese skins. After fermentation, the Molino a Vento Nerello Mascalese Orestiadi is separated from the skins and placed in steel. After a brief passage in wood, it is blended and bottled.
